My sis made apple cake bakes oats and they were immaculate. I've made carrot cake baked oats and they were an awesome lunch.Basically put oats, an egg, some milk, optional whey, baking powder, honey. After that you can do all kinds of variations. I've made a banana bread with dark chocolate one, super good. You just roast banas in the oven, mash em and mix it into the base batter. Then add some chocolate chunks. Pop it in a pre heated oven and bam. Delish lunch/breakfast or just a nice sweet treat.
