I'm not a grain timeline noticer, but could it be that pumping foods full of grain for an extended period of time made people develop an allergy?

Yeah, you're right. For thousands and thousands of years, bread being the staple of the diet and/or being eaten wirh every meal had absolutely no impact on people, but now that we put some of it in some stuff, people suddenly became allergic. That makes a lot of sense.
