1 in your off-hand if you want to work on your hip/leg stability, 2 if you want to to target the big muscles more.I do 1 because it helps keep things strong for running. I also do single leg RDLs with 1 in the off-hand for the same reason. But I also squat and deadlift with a barbell so I figure that covers the big muscles pretty well.
