You can overdo it with things like kefir or authentic Parmesan, but there's too much good stuff in there not to keep them around in moderation if you like them. Swapping full-fat for lower-fat versions also gets into complicated territory, and since we're finding some surprisingly healthy compounds in dairy fat (look into c15) it's probably better to keep at least some of that traditional fat matrix.
