Should I alter my training if one body part is developing and getting stronger faster than the rest?
I've been lifting for 3 months, and I suspect my back mass and strength gains are much more than the rest if that makes sense. Or is it just genetics

In my opinion, since you're getting started you should do the most of what makes you feel good and best at. That way by the time the stuff that is easy for you isn't working anymore you'll have your discipline cooked in. Then you can have leg day and whatever else sucks and you'll do it anyway because you get results from them

The entire point of dumbbell chest/bench press is to get a stretch on your pecs relatively safely, doing it from the floor takes half the normal bench rom away, plus doing two presses on the same day is stupid, and so is not varying your exercises at least one of the 3 days
