How do I get the Eros physique? I'm thinking, lift light but loads of reps; eat loads of protein and dial down carbs and sugars; and walk 10-15k steps a day. Plan?

Muscle growth (yes, your goal physique has muscle involved) occurs as a result of muscular failure, whether at high reps or low reps. Lifting too light will fail to stimulate failure either due to the ease of the exercise or due to you reaching cardiovascular failure before muscular failure. Lift to failure in accordance with a reasonable workout plan (bro split, upper-lower, push pull legs, anything works, who cares) until you reach your desired size and then diet.
