what are your thoughts on mac and cheese? It’s got great macros and tastes fucking amazing. Is there any downside to eating it a few times a week?

The only reason to eat anything like this is if you're going on an ungodly dirty bulk, making it with whole wheat pasta and something like emmental, adding ground beef and sausage and then popping it into the furnace.
I dont think it's american mac and cheese anymore atp but this is infinitely better macros tho shitty micros

That's not an inherent issue to the mac and cheese ingredients more than it is about it's quality
your body metabolizes fat into different things including energy if you give it the proper type of fat. You're fat because you cant stop binge eating

The poor man's meal, to be sure. Only reason it became a thing was the great depression, because poors couldn't afford real food.

It's literally just carbs and saturated fat with unimpressive protein content for the calories. Fuck all micros, too. There's is absolutely nothing nutritionally great about it, it's just a cheap meal made from shelf stable ingredients that keeps you from starving.

It's great, and cheap. Once or twice a week I'll make a box of generic mac and cheese but mix it with
-Venison and bella mushrooms with a bunch of garlic, diced onion, and maybe Shredded swiss.
-Steak, lime, chili powder, matchstick carrots.
-Lamb, spinach, and feta, also heavily garlic-ed.
-Chicken, lemon pepper, pico de gallo, random barbecue sauce.

You get the formula. Whatever I do it's a ratio of like 40% meat, 40% mac, 20% veggies. *Then* it has perfect macros. Don't know where you get the audacity to say it has good macros without adding equal portions of meat to it.

the cheap boxed stuff is consoomer-grade goyslop, getting the macros in order would involve adding so much extra stuff that calling it mac and cheese is stretching the term.
you're welcome to eat it as a rare indulgence or in moderation as your diet allows.

Bait aside, what is the definitive way to prepare mac and cheese sauce, /fit/?
A roux based mixture? The custard Southern style approach? Or just slap something with sodium citrate (processed cheese) in it alongside some milk/cream and call it a day?

It's a guilty pleasure of mine and your thread inspired me to buy some today. The problem is that a box calls for 1/4 cup of butter and some milk and I have no problem eating a whole box in one sitting. So, it's a bit like taking a bite out of a stick of butter.

Here's the secret I'd like to share with all of all of you. You don't need to add butter or milk at all. If you cook the macaroni with just enough water so that it boils down to almost nothing, you end up extracting all the starch while it's cooking. It thickens as it boils down, and if you keep stirring when it's very close to being finished, and then drain off the excess starch but keep some of it, and then mix in the cheese powder- then the end result is very creamy even without the butter and milk.

Add some real cheese and a half a pound of ham, and you've got a delicious meal with great macros and very little excess fat besides the ham.

I admit, it's better with the butter but if you thicken it just right with the starch that's already in the macaroni, it's pretty good even without it.

depends entirely on how much effort/time you want to spend on it
if you're going for a casserole meant to last you a week then you do a bechemel base and bake it
if you're just doing dinner for a night or two then you just cook the pasta right in milk and add in cheese as the starch released thickens it
