This is true, but compared to buying bread I'm still way ahead. I love my sourdough starter, it's like a pet. My wife does all the baking but I maintain the starter, 150g of flour per day in a quart jar is what I've settled on. Works out to about .$30 per day. It's a bit of work but well worth it. Her name is Betsy.

Ah yes, let's collect seeds filled with antinutrients, remove as much of the toxic stuff as possible, grind it down to a powder and mix it with water to create seed slime and bake it into a form. Sure the taste sucks, so we add sugar and salt to mask it, then cheese, meat, sauces and jams.

Lmao you don't need to feed it every day anon, that's only when initially creating the starter... Once established, put 25g in the fridge. Night before you want to bake, feed 50g/50g and leave it out. In the morning after it's grown, stash your 25g back in the fridge and bake with the rest (100g). Rinse and repeat. Unless you enjoy wasting time every single day, up to you

I've tried this and you're right, I could save some flour this way, but wife bakes 2-3 loaves per week and sometimes randomly biscuits, sourdough pancakes, and other stuff so I just keep it ready. I am never going to get lean at this rate but I'm happy where I am.

Best piece of advice I could give though is to add your liquid last always. Mix dry ingredients and then add liquid slowly and only until the dough ball comes together. If you just dump the amount the recipe says, I find you end up with too much and have to add more flour which is way more annoying than just not adding the water in the first place
