Good stuff most of the time. Some subtle issues may fall through the cracks and become problems for you later. I don't know how comparable this is to the normal rate of unlucky defect.
Ultimately, you'll probably be just fine buying refurbished like most folks, but buy from reputable companies and businesses, some are reported to be scummy with stuff they refurbish, like BH Photo Video.
If the warranty offered is less than 6 months, forget it.

What specific security issues are you worried about?
If you're not sure, because you don't know enough, you're almost certainly worrying over nothing.
Install only things from the repos. Do not expose services to the internet (you will know if you're doing this, it will not be an accident.)
You can totally operate outside of those restrictions and still be secure, but for a new and anxious person those are guidelines that mean you won't have any issues.
Also, if you somehow think Windows or MacOS are better, just remember that they have as many security flaws or more, they just never get seen because the source is closed. They're unlikely to affect an end user too.
Do you have some kind of OCD by the way? Obsessing over your room being just right, obsessing over non-specific security problems.
