What's the biggest dumb tv without spyware/telemetry one can buy that is faster than 60mhz refresh, like 120 or 144mhz for gaming?

Do dumb TVs even still exist? I have a TV from 2011 plugged into a mini PC but I've only ever seen smart TVs at other people's houses or in hotels.

Doesn't exist. Only thing you can do is not connect it to the internet during setup, or if it makes you, just use your phone hotspot or something for the setup and then just never connect it again after you're done.

You can maybe find a 40" class dumb, maybe. best option may be smart tv with your own media center pc plugged into an hdmi port.

Dumb TVs are almost always commercial signage or old bar tvs. I haven't seen one over 60hz and definitely not OLED.
The cheapest option is getting a used smart TV and putting it on it's own VLAN with no internet access. The most secure option is cutting into the back and physically disconnecting the wifi antenna.
If you're hard stuck on getting a dumb tv checkout Sceptre brand TVs. They suck visually but at least they're dumb.

You can’t, the only decent dumb TVs are built for commercial signage, so they’re very expensive, heavy as fuck, extremely bright and at best target 4K60, because nobody cares if their McDonalds menu is displayed at 144Hz

Your best bet is to get a smart TV, never connect it to the internet (check which brand you’re going with, some require you to do so to get past the setup), and then use an HTPC or Apple TV or similar for media.

take an old shitty router and connect a smart tv to it. this way you can still control it with your phone or stream stuff to it. hell even connect the router to your home network and don't provide it with a route to leave your private net.

I bought one mainly because it had no DVB-T2 receiver, which allows me to not pay the television tax in my cuck country.
