They don't for simple reason of scale. Discord handles 4 billion messages daily. That's 46296 messages a second. Let's assume that reading and doing moderation action would take 10 seconds per message. Meaning you would need to hire about 500k people 24/7 to read all the messages without breaks. Minimal wage in India is around 2$ per hour. That would cost them $1kk/h or $730kk/month. Discord simply does not have that much money.
They might be using AI for initial filtering but that is neither reliable nor really that cheap either.
In reality, they probably just AI scan some messages in DMs and community servers and maybe servers on their watch list. But unless you get reported or something, you will probably be hidden in the sheer amount of data that passes through discord.

It's not the same system. On discord you can create separate channels for R18 and sfw stuff. Admins are responsible for making sure people post in the right channels.
On Roblox there is no such mechanism. All R18 is banned and people have to report it. You can't create an R18 server, so people who want that need to hide. You don't need to hide on discord to do erp.
