I don't use AI because it's bad for the environment. Even if there were a service that provably uses 100% clean energy (there isn't), the water usage by the cooling systems is unacceptable.

That's even more contextual than the clean energy thing. Water usage is only a "problem" in areas where water is limited, like in Texas draining non-renewable aquifers. But here in the Great Lakes region, there's not really any water shortage of note.
You have a problem with a data centre in Norway, running off hydroelectric power, no shortage of local freshwater because the mountains collect tons of it, and lower cooling requirements to begin with due to more favourable temperature deltas with the average outdoor temperature?
Why is AI the problem, and not video streaming or the internet at large?

The power grid isn't an on-demand thing, the energy is always being generated and present along the service lines. You using less of it doesn't change a thing.

It is to an extent, actually. Load-following and peak power plants spin up additional turbines to balance load to match demand.
There's always SOME power generation happening, but the output and fuel use is not consistent throughout a single day, nevermind a week.
