Literally what's different between each new version of the iPhone other than 1-2% increase in processing power and 0.01s improvement in loading screen time or tab switching? Better glass screens? Better frames? Better cameras? 1% improvements, at most, if at all?

Foldable phones just became usable like a year ago. And there's still a long way for improvement.
Also the screen on foldables has a long way to go to look as good as a proper glass screened phone.
And dealing with the crease.
End game is probably a tri-fold phone for a proper large screen form factor instead of a big square.
