You can either install ThamemeOS, fuck with bootloaders, brick half of usual apps you need and still have a spy device, or you can accept that it's a spy device no matter what and do the following:

>disable all the usual telemetry and spying shit you are allowed to disable, this lowers the basic spying capabilities somewhat
>have a phone with backdoors outside your jurisdiction - e.g. this means having a chinkphone if you're a europoor
I always buy chinkphones for the sole reason, that its hardware and many parts of OS are backdoored by a government, that doesn't exchange data with my government.
That way, you end up with a usable phone that just works and that significantly reduces your government's capability to spy on you. It absolutely isn't foolproof, so my first point still stands - any possible illicit activity must stay out of your phone.
