I agree with OP that life was better when things moved a bit slower and you had to use your brain at least a tiny bit if you wanted to make a computer do something.
I think social media / 24 hour news cycle has ruined people's brains a lot more than easy to use consumer technology though

Not just more complicated, but less abstracted. It's specifically a problem with technology that's made to appeal to as many users as possible - e.g. smartphones - which in the process abstracts away entirely how things actually work, allowing people who don't understand anything to still use it to a limited degree - but only to a limited degree.
Old technology was more honest. The overdesigned, normalfag-facing technology isn't. Therein lies the issue.

Entertainment is so insanely cheap nowadays.
Most of the shit you did on a PC was to entertain yourselves either with a vidya game, tv/anime/movies or the internet.
The struggle to do certain things made you appreciate it more.
Now anyone with $50 to their name can get a device to blow out their snapases and dopamine receptors in an instant.

I feel as though I have to make things harder like torrent a movie versus just wipping out a credit card just to regulate my consumption.

Knowing how things work was a side effect. My first serious use with ssh and a terminal was making a VPN because my ISP was being shitty. I got familiar with my router knowing what ports and IPs are trying to host a game server. It's basic knowledge but it's more than what anyone has to deal with and thus have no exposure to this stuff.

having foundational knowledge lets you understand new stuff easier and trouble shoot problems more efficently. when you know an analog device is capable of x, and some daleet tells you that their brand new 2025 product cant support this feature, you know he's full of shit and can figure out a work around to the artifical block the forign faggot created to steal your money. when you know transitional technologies, you have a broader view of possibilities.

over simplified garbage, whether it be ui, design, and so on trains your brain to think in an over simplified way. the updoot culture of the modern era is similar to teaching someone to suck your dick. It doesnt benefit them to do so, and it's down right criminal. But boy does it feel good for the evil corporations doing it. Agreeing to a terms of service without reading it, agreeing to community guidelines without reviewing or questioning it... do you have any idea how much effort it took to get regular people to care about contracts before the digital era?
