Idk about like sound engineers, as far as using them in a studio vs. headphones or studio monitors.
But they're used a lot on stage, that's literally where the name comes from. And they can help with earpro there: thanks to the sound isolation, you can use a relatively lower sound intensity from the IEMs than you would from a stage monitor speaker, since you're not fighting against as much noise. And you can tailor the mix better to your preferences.

It does. Its very easy these days to get a good dongle DAC that will perform more than good enough for headphones and IEMs. Whether the DAC in a dedicated device will at least match this performance depends on the quality of device. A good one will, a cheap one will not.
In the end it's just about quality of equipment but in general PC with a $10 dongle like Jcally JM-6 is a better bet than some unknown music player.

Sound engineer/performing musician here. Just got Truthear Hexas after using kz AS10s for monitoring on stage and listening to albums. In studios I mostly come across Adam audio A7X or Yamaha HS8 monitors. I'm now using these Truthears to mix music over the studio monitors unless the room has proper treatment. I still use studio monitors no matter what to balance the mono and side images. Really like these iems. I like neutral response with detail. I'm yet to try them on stage but i have a feeling i will stay with the AS10's because i need to hear the bass player over bleed from the drumkit and the stiffer cable sits better running down the back of my shirt over the floppy cable that came with the Hexas.

it's still one of the most technical pos in its price range along with planars, but the price/performance ratio in newer models got so much better you have to think twice if you want to pay for it
overall if you value tactile, textured bass, humongous note weight and get holographic soundstage with your hrtf, it's still well worth it, but if you prefer other aspects like fine details in the treble then you can get close to it or even better with other pos
not to mention LM's tonality is not something that's universally liked so if you're sensitive to treble or want less warm mids (although it's not exactly bloated), by all means look elsewhere
