I think it's a bit overkill in terms of the card used, but not the number of cards.
I read a little further on it and it's actually the DP connections that are the limit here. The ports are DP 1.4 which tops out at 8K, and you need a DP 2.1 connection for 16K which is something the 50 series cards have, so they need around 4 cards per 16K screen, but not nearly 10 per screen which is what they have here.
They probably planned and designed this before those 50 series cards were available.
They could have used a shittier 1.4 card though.

The "K" notation is not strictly defined as far as I know, but typically the K refers to the number of 1,000 pixels that fit on the longest side.
In this case, the screens in question are 16,000 x 16,000 so they are using this definition rather than yours.
That doesn't fit for what you are calling "1K", but that isn't a common term, and not one that the marketers (who are really the people that use "K" so that consumers have an easy to understand linear progression) use. It's from before "K" became a thing but it would actually refer to 1280 x 720 most likely.
