I was going to say Debian but currently only ships the ppc64 architecture (so you need at least a G5 for installing it). The only viable OS is NetBSD in this case.

I'm sure someone will cite a long forgotten/overlooked non-Apple device, or something that never made it out of the lab. But I remember a friend at the time pondering getting one to play with the wireless, and he wasn't a Mac guy. Just Windows and early Linux nerd.

depends on your use case i guess since you could in theory just use it for writing and stuff or as a terminal but nothing remotely modern will work
