Ok, fluidsynth dev told me I need to put
set synth.default-soundfont /usr/share/soundfonts/default.sf2
in /etc/fluidsynth.conf and it solved my problem.

/usr/local/share/soundfonts/default.sf2 is used if you build fluidsynth yourself but I wanted to use distro-provided one and it's configured to use something different

I've actually done automation works on a couple of breweries, we installed sensors on the fermentation tanks to keep them at the right temperature and pressure, if you fuck with the setpoints you can trash weeks of work, maybe more if you manage to damage the tanks.
We have a website to control it remotely with all the modern security features necessary but there is also an HMI on site for the local technicians, what most shitty companies do is to skip the website and plug the HMI straight into the internet with a web VNC proxy protected by a 4 digit pin and call it remote management.
