When I unbloated my xiaomi, I got carried away and removed most Google/Android apps too.I've been using Fossify for a while now, and the only thing I miss is the scam thing from Android's default phone app.

An intent can launch a specific in-app activity but you can also fire an intent with a string that could be matched by activities from other apps. FOSS apps should use string intents wherever some other app might be able to provide similar functionality. Then the user sees the popup asking which app should handle the intent.
