Any performance difference is small enough to be negligible.
The advantage of a single stick is that you can always buy another one and run it dual channel later. Some mobo/cpu cooler configurations might also block one of the ram slots which is no problem when you only have a single stick, but this is usually not an issue

I’m still using DDR3 in triple channel on my personal rig and real world performance “feel” is better than the DDR5 slop in the Dell laptop my employer provided.

Two is better because you can use double the memory bandwidth, which increases performance when you are not limited by your GPU. Though DDR5 sticks have their own pseudo dual channel built into them, so having two sticks vs one doesn't matter as much anymore compared to DDR4 and before days. But you will still see an uplift if you are CPU limited.

However the advantage of a single 32gb stick is that it's a bit cheaper. And if you want to upgrade to 64gb later all you need to do is buy an another 32gb stick. While if you have 2 16gb sticks your options are to buy two 32gb sticks separately which costs more money. Or you would buy 2 more 16gb sticks. But on consumer platforms running 4 sticks is worse than 2 sticks and if you have an AMD system you will probably run unstable if the RAM is higher clock speed. And you will probably have to lower to JEDEC speeds if you want to run 4 ram sticks stable on AMD. Intel tends to have better memory comparability still. But in conclusion if you plan to upgrade later to 64gb get the single 32gb stick. If not get 2 16gb sticks.
