I'm not familiar with media servers, but probably to get the metadata Jellyfin doesn't need to go through the actual content (the actual video streams in the files), just grab the filenames from them or maybe read just some .nfo files or file headers. So doing that to a small number of files in the file list it's probably faster than doing it to more files (no matter if they are the same size on the disk).
