Installing manually won’t make you any more knowledgeable anyway. You learn Linux by actually using it as a daily driver. I installed a ch manually, but I still used a guide and didn’t even know how partitioning/data formatting worked until I converted my other drives from ntfs to ext4 and learned the hard way why it was important to do that.
