Can someone explain why windows 10 downloads 40+ gigs of bullshit at 3 am every night I leave it connected to the internet?

And is there any way to stop it besides just staying offline at night?

Disable the "Connected User Experiences and Telemetry" service.

It may be something as simple as dead RAM - especially if you get the occasional blue screen. Run memtest86 and test all of your memory (run ventoy on a thumbdrive then put memtest on it). I had a problem where the RAM was throwing so many logic errors, md5 checksums were cycling everytime they were ran - so maybe windows is trying to re-download files it thinks are corrupt.

You could always try Linux.
