Ideally, identify the telematics unit and remove it. That might brick, if the manufacturer was a dick. Merely disconnecting the telematics antenna would still result in EM radiation potentially strong enough to communicate to a very close cell tower, or at the minimum it will be transmitting the car's IMEI in close range for snooping sensors on the road to detect and log.
