But you definitely need to balance the trade-offs between single-core and multi-core performance. I felt the 7970X was the sweet spot for my build, because as you go up the tiers they start being multi-core heavy at the expense of single-core.Also, my RAM bandwidth is quite high with the quad channel.

Core-wise, not much has changed for Ryzen since 2017 (Ryken 1k), and even less since 2020 (Ryzen 3k, bringing R9 to a mainstream socket).If you only look at R5/R7, almost nothing has changed for cores - the 6 / 8 core chips are still where they were in Ryzen 1k. 4c/8t used to be the lower half of R5, but got moved down to R3 (whenever there even is an R3 anymore). APUs typically had fewer cores than regular Ryzens of the same segment, but now have the same number.Zen 6 seems to finally bring moar coars, but will take another year to come out (give or take a few months).
