I mostly do sim games rather than triple A. Some are multi-core optimized, in which case game goes brrrrr. But you definitely need to balance the trade-offs between single-core and multi-core performance. I felt the 7970X was the sweet spot for my build, because as you go up the tiers they start being multi-core heavy at the expense of single-core.
Also, my RAM bandwidth is quite high with the quad channel.

Anyway, your overall point is accurate. Core-wise, not much has changed for Ryzen since 2017 (Ryken 1k), and even less since 2020 (Ryzen 3k, bringing R9 to a mainstream socket).
If you only look at R5/R7, almost nothing has changed for cores - the 6 / 8 core chips are still where they were in Ryzen 1k. 4c/8t used to be the lower half of R5, but got moved down to R3 (whenever there even is an R3 anymore). APUs typically had fewer cores than regular Ryzens of the same segment, but now have the same number.
Zen 6 seems to finally bring moar coars, but will take another year to come out (give or take a few months).

It's a real god damn shame, while its cool you can pay a shit ton and get a high core count CPU, 8C16T should be the mid to low end PCs now. It's basically the old LGA 2011 situation in the 2010s, sure you can get 6-8 core parts, but you're paying a lot for it, and don't expect anything to drop in price with progress becsuse we're millking it.
