VPNs are mainly for bypassing georestrictions and stuff like that. They do help a little bit to anonymize your location/identity from the servers you interact with, but they're not the best tool for that.
It's generally considered good practice to torrent with a VPN, because some ISPs will harass you if you torrent a lot. I've never heard of any company or government going after somebody who used a VPN for piracy.
If you want anonymity online, Tor is generally considered a more trustless, decentralized solution than a VPN. Note that anonymity and privacy aren't the same thing. Browsing through Tor will cause you to get blocked and harassed by many of the services online, but VPNs typically don't get blocked as much. You might have times where you would conceivably want a VPN exit IP, but you don't want the VPN provider itself to know your identity.
