How difficult would it be to set up a basic system with SELinux, Xen kernel, GNOME, X11 (not XWayland) and Wayland (so I have a choice), and something for virtualization?

I will anyway be running most things in a virtual machine anyway, and I just need the base OS to be Gentoo so I can impress people.

You don't have to do anything besides installing a package to get SELinux. I don't know anything about the Xen kernel, but all the other projects are also trivial.

not as hard as you'd think. start with the gnome/desktop profile and most of the basic USE flags will be set up for you. selinux i haven't tried before but i'm sure gentoo wiki will sort you out. make sure you read through it first so you can set up your kernel with the appropriate features/modules to avoid needing to compile it twice (chances are if you're customising the kernel you'll need to build it a few times until you get it right, though that doesn't take as long as you'd think since you can just build the changes after the first time, which is much quicker)
