Why should you bother with hoarding movies or TV shows if all of it is available for streaming and seeding?

If I want to watch something offline, what stops me from downloading it, watching and deleting it?

It depends if you have a high end PC or not. With a high end PC you can encode AV1 video at like 9001 FPS and depending how high of a VMAF score you're okay with it seems like 1080p blu-rays can be compressed to a few GB with little quality loss. Hundreds of movies per TB I think....
