First two were Pop!_OS, but I'm thinking of trying out EndeavourOS this time. I still debating with myself though, because why...? what is the point of going Linux when I know damn well I need to jump through the hoops just to make something work and it's a huge waste of time when windows just werk.

start with arch and build the system you want from ground up
i did it 6 months ago, it was a learning curve but if i did it you can do it too.
you will learn everything you need to know to comfortably operate it everyday and troubleshoot issues you might encounter. don't start with some random meme distro because if anything breaks you have no idea how it was made and how to fix it and you will learn nothing about linux invest some time, i promise you won't regret it.

The default fonts for non-english languages are pretty often garbage. Take a look at the Thai fonts on here https://wiki.archlinux.org/title/Fonts (EndeavourOS is just fancy Arch, everything here will work there).
