Based on my research(that is, error messages in the console) the Cloudflare are you human box looks at your probably unique browser fingerprint and checks if your internet browsing history going back years looks human-ish. It's probably done in a more sophisticated way than this site but in general the principle would be about the same.

it's not even very comprehensive since your browser also leaks your CPU count and more indirectly what ad blocker or other similar extensions you use.
