I've got a Moto G100 (the og '21 version) which is working really well for me even now, but lately the microphone has been shitting out and people can't hear me in calls properly anymore so I'm having to eye up replacements. The Xperia 5 V looks to fit the bill nicely since you can nab them for about £400 these days. Is there any real drawback to getting a model that's a couple years old other than running out of updates sooner? To be honest that might be a positive with the way every new major Android version seems to fuck up the UI in ways that really annoy me.

No. Most pens will DAMAGE the inside screen. There's a reason they don't come with one. I wouldn't recommend a foldable to anyone, having had one myself (Z Flip 5). The inside screen is just too easy to damage, even with a fingernail, and the mandatory screen protector gives me the ick (peeling and needing to be sent away to be replaced (((two weeks))) before warranty ended made me get rid of mine).

That said, it is a good price. But they only promised 4 years of updates and it's about that time. So you might get Android 16 eventually, but not 17 or further, and security updates will dry up leaving you vulnerable.
