it seems like they have been pushing for it lately, Iphone's and now pixels don't support a physical sim anymore. Why are they doing this at all when no one wants it?

they are convenient. instead of having to pay for a plan for years I just buy temp e-sim, use them and then delete them. it's also convenient for when you have to give your contacts to your workplace. you don't want them to have your personal contact info or they might expect overtime of you out of nowhere. what you can do is just turn the work e-sim off when you are done for the day and then just use your device for personal stuff. in the end it's quite convenient. mainly the on-demand part. if you are concerned about cell tower spying on you buy a faraday cage

You obviously never travel and have never had a job. I used to have to use wifi until I could get to an electronics store and buy a SIM often after handing over a passport and getting processed.

Now I can load up an esim the day before I even land, and switch to it before I even disembark from the plane.

And for work, I used to have to use dual or tri sim phones which got annoying as I have several sims of my own. With esims I can have dozens of sims on one device and switch between two active ones at any time.
