I used to use it as a plex server for years. But now it struggles with playback of most video so I drawered it and got a mini PC that I now use for network storage, seedbox and video. It seems a shame to let it collect dust

since you moved your plex server over to a mini pc maybe you could repurpose the pi as an htpc running libreelec/plex client on a tv? thats what i currently do but with jellyfin. some other things i use pis for is octoprint for my 3d printer and home assistant. something else ive been wanting to do is get stuff to setup piaware to track planes that fly by
