you can get a wildcard with dns validation and have certbot do it all for you and never worry about it again

if you're just doing the two domains you can get two certs instead of domain + wildcard. It does that through your webserver instead of dns records. It's still all automated but you'll have to repeat the process if you add another subdomain.
