In this era where monopolies seek to impose their will and censorship, trampling on our individual freedoms, what do you consider to be the essential and mandatory technological knowledge needed to be as self-sufficient as possible?

Regardless of your tastes or beliefs, I think this concerns us all. Just look at the dirty trick the financial monopolies pulled—they want to tell you what you can do with your money. Not to mention the arbitrary censorship that is being imposed across the entire Web.

You can choose not to take this seriously. It's all fun and games until the bull catches up with you.

basic client-server architecture, local vs online processing, and firewalls. that's pretty much it. once you understand these concepts, the world is yours, and the role of the inetrnet becomes clear:
communication (messengers)
fetching data (weather, torrents, etc)
social media <- CENSORSHIP HERE
For any and everything else, the internet is entirely optional
