It's just a Finder window made to look like an installer.
You're literally just copying a file from the disc image into the applications foler. All the application is inside that .app file. Exactly like an AppImage. There's nothing to stop you opening another Finder window and dragging the .app file anywhere else too.

If people decided that all AppImages go into /app and someone made an AppImage installer program, set up an association to open an AppImage as that program. Made it so that on launch it would show the same thing: AppImage icon, arrow, a directory with drag and drop interaction. That interaction would move the AppImage to /app/AppImage. That same app would also be a launcher that would look at a path and if launched from /app/ path it would recognize it's not installation, and would just launch the AppImage. This is basically the same thing.

Installation of any application ever was just glorified copy. In the days of DOS it was more obvious, but nothing has changed. The only thing install shields and similar wizard programs ever done was just a copy. With time they also started doing some post-install actions like setting up some registry settings and such. It's because Windows moved on from ini files to global registry to make it harder to "copy applications".

On the Linux site most configuration is text files so installation is mostly always just copying files into specific places. Some perverts though tried to port the registry to Linux, but fortunately most people are not retarded and don't do that for their applications.

If Apple did that, you'd complain about the option to choose being taken away. Even if the option isn't obvious with windows like these, it's still there.
Besides, .pkg files and the app store exist for this purpose. The dmg/app format (itself a carry over from NextStep) is just an older way that people still prefer.
I like how some dmg images still have folders with bonus stuff on them, like an old install cd. DaVinci comes with a 4000 page pdf manual.
