You're mishmashing a lot of different sectors there, OP. Are you interested to know the difference between professional stuff and consumer stuff found in smartphones? Is that your question?

Sometimes, but not always. Television cameras are notorous for using small sensors. Same goes for the majority of camcorders, except a few professional ones. Industrial cameras don't need big sensors either.
Also CCDs are only ever used nowadays for industrial purposes where a global shutter and high sensitivity is still necessary. For typical imaging CMOS have taken over since 15 years ago.
