How do I cope with the fact that I might have cockblocked myself out of a higher salary?
I had a year long internship on this corpo where they made it clear than they wanted me after stating that I was getting an offer somewhere else.
This gave me the upper hand, but the moment they asked me "How much do you expect to earn?" (this is in a different department from where I had my internship) I fucking froze and gave them an acceptable range as a junior.
Then they gave me a salary slightly above of what I asked.
This could be considered a win.
I earn slightly more than most of my former coworkers (who are data analysts while I am now an engineer), more than anybody out of my CS friend group, whilst ascending from lower to upper-middle class in my country. And all this as a recent graduate.
However, the greedy bastard inside me still wonders how much more I could have gotten.

Another thing is that they pretty much just opened up this role with me, as there was no other guy with my established duties before. Perhaps I should have asked for more than a junior salary? The salary I got is above average for that position as a junior in my city. What can I do now?

You have to switch employers and lie about your current salary. like, by a lot. Although you're stuck for 1-4 years depending on your country for now
