OneUI 8.5, about the same as 8. The rumour about OEM unlock coming back may be correct but it's still missing on this Fold 7 internal build.

From my experience with two samsung foldables, they're basically the best non pixel android that I've ever used, from my experience everything usually just werks and werks mostly bug free, and the z fold phones from my experience are extremely great phones.
But as always, the best android skin is the one in pixels, the problem is that the hardware it comes inside is pure shit.

No. If you can't unlock the bootloader you can't load a custom ROM. At least for the US version they've removed the ability to unlock the bootloader, even for the "factory unlocked" version of their phones.
I was considering a Samsung phone but found out about that and got a Motorola instead. I haven't actually unlocked it, because I haven't needed to, though I did get the unlock code for it from them and saved it. On a Samsung I'd have much more need to root because even as far back as my old S7 Edge, they loaded progressively more bloat and forced crap, and it's only gotten worse since.

there is a ton of data on there you don't want to lose, and with modern anti-theft protection, it's a pain in the ass to get the data if even just the screen breaks

Got an S25 FE like three months ago and I kinda regret it ngl.
OneUI looks and works great, but it's filled with bloat. There's AI features that you can't get rid of, the anti spam call system is pretty bad (and also sells ur number to third parties), comes preloaded with Microsoft, Google and Samsung apps (some of these can't be deleted and its pretty annoying) and some parts of the OS are designed to be used with the full Samsung ecosystem.

I've been thinking of selling this phone and getting a Pixel 7 Pro, that's how much I'm disliking it.

Reminder that since 2023, to use the Samsung Health app you must agree with them processing and selling away all of your information gathered therein like sleep quality measurements, heartbeat measurements, weight measurements, blood oxygen measurements, the food you note down, amount of steps, recorded runs and whatever else.
