It's basically a single set of controls but copied and apsted over however many channels you want. They do that not because anybody likes having a shit ton of knobs and faders, but because it's the best interface we've come up with to handle things, so far. And no, a touch screen is absolutely not an improvement.

Say you have a guitar track, a bass track, a vocal track, piano, etc. They all control the levels of that individual track for mixing, balancing, etc. Then there's a master, then there's EQ. It all adds up but they all serve a purpose

Doing shit ITB is completely possible, but if you're not careful, you could suffer from carpel tunnel or some other repetitive-motion injury. It's good to have a dedicated interface for specific functions, that way you don't have to use the mouse & keyboard for anything besides what they're best suited for. The only sequencer I have used that is better with a mouse/keyboard is Renoise.
