It's actually a good idea, but I actually use OpenDNS and I set it up at the Router level. I don't use DNS over HTTPS though.

Blocks ads on everything, even devices where you don't have root.

Yes, but not through Firefox. I just have DNS over TLS to quad 9 setup on my router. I don't particularly care about unencrypted DNS inside my network, especially since the IoT garbage is segregated from everything else.
