ive seen some models (mainly education laptops) that have started using UFS 3.1 instead of eMMC. that's basically newer full-duplex phone storage but im pretty sure its barely on par with a SATA SSD

You mean without special software? Not sure how a parallel port works, but if there is a bunch of GPIOs in there then you could do any purely digital interface.
