Ray tracing is conceptually and mathematically pure and accurately models what happens in the real world. Except radiosity is even better.

The GPU rendering pipeline is approximated cope with multiple bandaids piled on top to bring it closer to ray tracing perfection.

But the GPU pipeline can be done in real time so there always that.
