I am dual running windows 11 and Ubuntu (because realistically It's the easiest to setup); what should I actually do on it? I understand the benefits of it being open-source and optional with data sharing, but I have no clue what to do with it.

Pick one thing you exclusively use Windows for and start doing it only in Linux. Gaming, graphic design, dev, whatever, get everything set up so you can live in Ubuntu while you do it.

Maybe we can share some insight if you tell us what you usually do on Windows? I am willing to bet, as another anon here rightly stated, that you can do 95% of your Windows tasks in Ubuntu comfortably.
