I'm upgrading to windows 11 and I didn't realize how much more invasive it is towards privacy. I can't get past this screen where it wants my outlook email and to make an outlook email I have to give them my phone number.
What other information is it gathering in the background?

uninstall, get Windows 11 Enterprise from massgrave, during install when it asks for your email, click the small text in the bottom instead that says "join a domain" which is just an obfuscated button for making a local account

No, it's always been this way, they probably just heuristically detected that you are a good boy (probably using Chrome on Windows, without a VPN or browser plugins, with tracking cookies and a clean IP address from a god-fearing residential ISP)
