Comparing it to platemail or kevlar doesn't seem adequate when the lore is that the particles in the armor adapt in various ways to their environment, especially on contact.

I don't think the lore ever explains why it's meant to look like a flayed man, but I haven't played any of the Crysis games in decades. I don't see why it should be realistic when the designers can just wave it away with a "that's just how it works, it's alien tech deal with it". They probably saw someone covered in cables and went "brilliant, that's what we're going with!"
