Also Proton is not gonna share/sell/use all your information for profit like most big tech email providers do, so even if Proton hands over the limited information they have on you to law enforcement if they're served a warrant that's still miles better than most alternatives. Not much to worry about if you're in the vast majority of people not doing anything criminal tied to their email account. If you need that extra security then yeah look elsewhere.

i've only used Postfix + Dovecot, which has worked for me since 2013, with the only exception being the recent major update to dovecot that required writing a new configuration, it has been surprisingly hands-off. i did add DKIM and DMARC along the way as other providers started to require it, but it's certainly not something you have to babysit

If the government wants to find you by email then they will do so. Even if you self host your email you're still registering a domain for it. So even if you tell your domain registrar to hide your whois info they can just get the info via warrant.
All that self hosting really could do for you in this case is that you can make sure things are deleted. Even then that's a bit of a gamble unless you have the money and Internet connection to host it entirely from home and not some vps service.

Mainly when you talk about security and privacy on the internet it's really only to keep corps and non-law enforcement from finding out who you are and fucking with you in all the various ways that they do.

I have no idea what that first sentence means, but there is a lot less overt corruption than basically all of south east and southern Asia. There is a lot less than there used to be according to most people I talked to there. But most people believe it still goes on. I don't really know the details of stuff like that but at least in normal daily interactions police can usually be trusted, I would trust them more than the incompetent retards in my own country (first world). As for the court system I don't know a lot about it. Chinks are devious and always getting up to tricks, so you have to be careful, but they do seem to fear the law and are less egregious than SEA monkeys for example.
