You can use it for AI. The dual GPU will support Vulkan if you install Linux and activate the experimental drivers. From there you are just a quick compilation of llama.CPP away. You could also max out the RAM, officially 64gb but it will work with 128 only at a slower speed.
My trashcan was one of my.favorite e-waste purchases. It makes a great everyday workstation and ita fun to try and push it well beyond its limits.
You van run MacOS if you want. I know it will run Sonoma with little issue but I never did try Tahoe. Although I think it makes a better Linux machine especially if you decide to rock Window Maker in honor of NeXT

The upgrade is not worth it. If you must use the trashcan and need better graphics your best bet is a externalities GPU enclosure. You can hook one up to the Thunderbolt 2 ports.
But to be honest trying to get better graphics out of it is just a waste of money. It would be better to buy a tiny 1366x768 screen and just play Quake 3 at that resolutions if you must game.
